Our Research and Development team members work together alongside veteran Roastmaster Felton Jones to brainstorm ideas and create beverages and flavor profiles (including coffee roast blends) to feature as limited-time offerings or permanent menu items. While ideas for new products are typically borne from our deep understanding of customer preferences, beverage innovation is brought to life through the collaboration of several departments, including marketing, operations, and distribution. We aim to ensure a creative idea can be implemented logistically and operationally. Additionally, new product ideas are shared with our Franchise Advisory Board for further evaluation and feedback.
This collaboration ensures that every new flavor we introduce resonates with our diverse customer base while aligning with the unique identity of PJ’s Coffee. This internal partnership allows us to stay on-trend and at the forefront of innovation while maintaining the bold, distinctive personality that defines our brand. For example, we’ve attracted a number of new guests over the past year by introducing offerings that align with their tastes and preferences — such as sweet cold foam — while making them distinctly our own, like pairing it with our Southern Butter Pecan Cold Brew.
Innovation with Purpose
PJ’s Coffee is committed to being at the forefront of flavor innovation, but we also understand the importance of strategic planning. While trend tracking is essential, we focus on short-term forecasting — typically four to five months before a new flavor launch. This approach allows us to stay agile, quickly adapting to current market trends and ensuring that our offerings are always relevant.
Our commitment to seasonal flavors is a perfect example of this strategy in action. We take time-honored holiday flavors like pumpkin and peppermint and give them a PJ’s twist, creating drinks that resonate with guests and drive incremental seasonal traffic to our locations. Holiday favorites such as pumpkin and peppermint become our Pumpkin Latte and Peppermint Bark Latte, while in January and February, we stay true to our New Orleans roots by offering our ultra-popular King Cake drinks in celebration of Mardi Gras — a special occasion that guests highly anticipate every year due to its unique selling point.
